Ketjap manis is a sweet soy sauce originating from Indonesia, commonly used in various dishes and as a condiment.

Ingredients

  • 1 cup sweet soy sauce (ketjap manis)
  • 1/2 cup palm sugar
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 1 small red chili, finely chopped
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. 1In a saucepan, combine the sweet soy sauce, palm sugar, and water.
  2. 2Add the minced garlic, chopped chili, ground ginger, black pepper, and salt to the saucepan.
  3. 3Stir the mixture over medium heat until the palm sugar dissolves completely.
  4. 4Bring the mixture to a gentle simmer and let it cook for about 5-10 minutes, stirring occasionally.
  5. 5Remove the saucepan from heat and let the sauce cool down.
  6. 6Once cooled, transfer the sauce to a clean bottle or jar for storage.
  7. 7Ketjap manis can be used immediately or stored in the refrigerator for up to a month.

  • 2 tablespoons shrimp paste

  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder

Instructions

  2. 2In a blender, combine the soaked chilies, shallots, garlic, shrimp paste, tamarind paste, palm sugar, salt, turmeric powder, and coriander powder. Blend until smooth.
  3. 3Heat the vegetable oil in a pan over medium heat.
  4. 4Add the blended sambal mixture to the pan and cook, stirring frequently, for about 10-15 minutes until the oil separates from the paste.
  5. 5Taste and adjust seasoning if necessary, adding more salt or sugar to balance the flavors.
  6. 6Once cooked, remove from heat and let it cool.
  7. 7Transfer the sambal to a clean jar and store in the refrigerator for up to a month.
  8. 8Serve as a condiment with grilled meats, rice, or vegetables.
