1 1/2 cups (360 ml) original unsweetened Almond Breeze Almond Milk
2 tsp white or apple cider vinegar
1 1/4 cups (307 g) unsweetened applesauce
1/2 cup (120 ml) strong brewed coffee
2/3 cup (160 ml) melted coconut oil
2 tsp pure vanilla extract
2 cups + 2 Tbsp (320 g) whole-wheat pastry flour or unbleached all-purpose flour
1 1/3 cups (266 g) organic cane sugar
1 cup (96 g) unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1/4 tsp salt

Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine the almond milk and vinegar. Let it sit for a few minutes to curdle.

Add the applesauce, brewed coffee, melted coconut oil, and vanilla extract to the bowl. Mix well.

In another bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Pour the batter into a greased cake pan.

Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
