Vegan Chocolate Cake

1 1/2 cups all-purpose flour
1 cup granulated sugar
1/3 cup unsweetened cocoa powder
1/4 cup flax seed meal
1/3 cup vegetable oil
1 tsp vanilla extract
1 tsp baking powder
1 cup water
1 cup almond milk
1 cup vegan chocolate
1/2 cup dairy free margarine
1 cup icing sugar
1/4 cup sliced almonds

Welcome to How To Cook That I'm Ann Reardon and today we're finally making a vegan cake.

Add the sugar and cocoa powder into a bowl.

Add the flax seed meal to replace the eggs.

Add in the vegetable oil, water, vanilla, and baking powder.

Mix together until just combined, being careful not to overmix.

Pour the mixture into two round lined baking tins.

Bake at 180C (350F).

For the frosting, heat almond milk and vegan chocolate in the microwave in 20 second bursts, stirring well each time until smooth.

Put the vegan ganache in the fridge to chill.

Once the cakes are done, insert a knife into the center; if it comes out clean, they are done.

Run a knife around the outside and leave the cakes to cool in the tin.

Whip together icing sugar and dairy free margarine until smooth.

Add the chilled ganache to the icing mixture and whip through to make a rich vegan chocolate frosting.

Place one cooled cake onto a cake stand and add a generous scoop of frosting, spreading it out to make it level.

Add the second cake on top and cover the top and sides of the cake with frosting using a spatula.

Put the cake in the fridge to chill.

Give the cake a second thin coat of frosting, taking your time to make it look neat.

Melt more vegan chocolate and spread it out on acetate.

Once it starts to set, draw lines across it using a knife.

Wrap the chocolate around a rolling pin and press the ends together, weighting it down if necessary.

Cover a thin strip of acetate in chocolate and sit it inside a baking tin to make a ring.

Spread out a circle of chocolate onto acetate, a little bigger than the baking tin.

Add the chocolate ring to the circle, removing the acetate before placing it on.

Sprinkle sliced almonds inside the ring.

Run a knife around the outside of the ring once it starts to set.

Remove the acetate from the chocolate curls and arrange six in a circle, adding melted chocolate into the center.

Add another six curls in the gaps between the first layer, and more in the center until it looks full.

Take off the extra chocolate from around the lid and carefully place the bow on top, using melted chocolate to fix any breaks.

Pile fruit on top of the cake over to one side and rest the lid on top.
