Peel and quarter 2 Yukon Gold potatoes, using up to 3 if necessary.

Add 5 pints (2.37 liters) of water to the largest pot.

Add the quartered potatoes and 1 pound of bacon to the pot and bring to a boil.

Roughly chop 2 pounds of cabbage and add to the pot.

Quarter and add 2 turnips to the pot, cutting them down if too large.

Peel and stud 2 medium onions with 2 cloves each, then add to the pot.

Chop 2 small carrots and 3 stalks of celery, then add to the pot.

Crush garlic with a knife, mix with salt to create a paste, and add to the pot.

Add 6 sprigs of parsley tied with string and 1 bay leaf to the pot.

Add 1/2 teaspoon of margarine and 1/2 teaspoon of thyme to the pot, then season with salt and pepper.

Partially cover the pot and simmer for 1.5 to 2 hours.

15 minutes before serving, add a can of white cannellini beans to the pot.
