Start with a big soup pot and add some olive oil.

Add chopped onions and carrots to the pot and soften them a little.

Stir in minced garlic, tomato paste, Italian seasoning, pepper, and salt.

Add a can of diced tomatoes and chicken broth.

Add diced potatoes and a bay leaf.

Pile in all the cabbage and stir.

Partially cover the pot and let it simmer until the vegetables are tender, about 20 minutes.

Stir in some fresh parsley before serving.

Serve in big bowls with lots of parmesan and a thick slice of buttered sourdough on the side.
