1 tbsp olive oil
1 yellow onion, diced
1 cup carrot, diced
1/2 cup celery, diced
3 - 4 cups cabbage, chopped
12 oz (350 g) kielbasa
3 cloves garlic, minced
1 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp hot sauce
1 14.5 oz. can diced tomatoes, undrained
8 oz. V8 juice
6 cups chicken broth
salt and pepper to taste
1 tsp dried basil
1 tsp dried parsley
1 tsp oregano
1 tsp mustard powder
1/2 tsp smoked paprika
1/2 tsp onion powder

Prep and dice the veggies.

Heat butter and olive oil over medium heat in a large soup pot or Dutch oven. Add the kielbasa, onions, carrots and celery. Sauté it for 8 minutes, stirring occasionally.

Add the garlic, tomato paste, Worcestershire sauce, hot sauce, and seasonings. Sauté for 2 minutes, stirring continuously.

Add the cabbage, diced tomatoes, salt and pepper, and V8. Stir to combine.

Add the chicken broth. Bring to a gentle boil, then reduce to a simmer. Simmer for 25 minutes with the lid partially cracked. Taste, and adjust salt and pepper if desired. Serve!
