Their popularity has spread beyond Jamaica, with variations found in Caribbean communities worldwide, making them a beloved comfort food.

Combine 3.5 cups of flour, 2 tablespoons of turmeric, 1 teaspoon of pink himalayan salt, and 1 tablespoon of sugar in a bowl.
Shred butter into the flour mixture using a shredder for a crumbly texture.
Shred lard into the mixture as well.
Use a fork to mix the ingredients to prevent melting the butter with your hands.
Slowly add 1 cup of ice cold water while mixing with the fork until crumbly.
Knead the mixture with your hands to form a ball, adding more water if necessary.
Sprinkle flour on the countertop and roll out the dough, keeping bits of butter and lard visible for flakiness.
Fold the dough and place it in a plastic bag, refrigerate for 30 minutes.
Heat 2 tablespoons of olive oil in a pan over medium-high heat.
Add 1 pound of lean ground beef, breaking it into small pieces, and add 1 cup of water.
Cook for about 20 minutes until the beef absorbs the water, continuing to break it up.
Add allspice, thyme powder, paprika, pink himalayan salt, and cracked black pepper to the beef.
Incorporate 1 whole chopped habanero, fresh yellow onions, and green onions into the mixture.
If the mixture dries out, add more water as needed.
Add panko bread crumbs (about 0.5 to 0.75 cups) to bind the mixture without adding flavor.
Stir in 2 tablespoons of salted butter and set the filling aside to cool.
Roll out the dough after its second rest and add more butter and lard before the final roll.
Cut out dough circles using a bowl as a guide.
Add filling to the center of each dough circle, adjusting the amount to avoid overflow.
Fold the dough over the filling, sealing it with fingers and pressing edges with a fork.
Place the patties on a tray and brush with egg wash for shine and browning.
Preheat the Traeger Timberline 850 to 375°F and bake the patties for 20 to 30 minutes, checking for golden brown color.
Let the patties rest for a few minutes before serving.
