Jamaican Beef Patties

Jamaican beef patties have roots in the island's colonial history, influenced by both British and African cuisines. Traditionally enjoyed as a street food snack, these flaky pastries are filled with spiced beef and are a staple at parties and gatherings. Their popularity has spread beyond Jamaica, with variations found in Caribbean communities worldwide, making them a beloved comfort food.

Start with 4 cups of all-purpose flour in a mixing bowl.
Add salt, baking powder, sugar, turmeric powder, and curry powder to the flour.
Incorporate shortening and margarine (frozen) into the dry ingredients until crumbly.
Add ice cold water gradually and knead until the dough comes together.
Wrap the dough and refrigerate for about 30 minutes.
In a pot, add 1 pound of ground beef and cook until no pink remains.
Season the beef with salt, black pepper, and jerk seasoning.
Add finely chopped onion, garlic, fresh scallion, fresh thyme, and chopped scotch bonnet pepper to the beef.
Mix in soy sauce diluted with water, then add bread crumbs to absorb excess liquid.
Blend half of the beef mixture in a mini blender to achieve a smooth consistency, then allow to cool.
Dust flour on a surface and divide the dough in half, rolling each half out.
Incorporate more shortening and margarine into the rolled dough, folding and rolling to create layers.
Refrigerate the dough again for 15-20 minutes to keep it cool and firm.
Roll out the chilled dough and scoop beef filling onto it.
Use a pastry wheel to cut and seal the patties.
Place patties on a greased baking tray and bake in a preheated oven at 350°F for 35-40 minutes.
