Start by measuring 1 and 3/4 cups of flour into a mixing bowl.
Add 1 teaspoon of turmeric, 1/2 teaspoon of curry powder, 1/2 teaspoon of salt, and 1/2 tablespoon of sugar to the flour and mix.
Pulse the dry ingredients in a food processor until combined.
Cut 1/2 cup of cold butter into cubes and add to the flour mixture, pulsing until it resembles small nuggets.
Gradually add about 1/4 cup of water, pulsing until the dough comes together and is slightly tacky.
Wrap the dough in plastic wrap and refrigerate it to chill.
Dice 1/2 onion and chop 3 stalks of green onions.
Peel and chop a 1/2 inch knob of ginger and add it to the bowl with the onions.
Slice 1 clove of garlic and add it to the mixture.
Mince 1 scotch bonnet pepper and add it to the vegetable mixture, being careful not to touch your eyes.
Add 2 teaspoons of fresh thyme, 2 teaspoons of paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/4 teaspoon of allspice, 1/2 teaspoon of salt, and fresh pepper to the vegetables and pulse until slightly chunky.
Heat oil in a skillet over medium heat and add the vegetable mixture, cooking for a few minutes until softened.
Add 1/2 pound of ground beef to the skillet and mix with the vegetables.
Season the meat with more salt and add about 1/2 cup of beef stock to keep it moist.
Incorporate a couple tablespoons of breadcrumbs into the meat mixture for texture.
Once the dough is chilled, roll it out on a floured surface to about 1 to 2 centimeters thick.
Use a bowl to cut out circles of dough, leaving space around the edges.
Place a spoonful of the beef mixture onto one half of each dough circle, leaving space at the edges.
Fold the dough over the filling and seal the edges with a fork, poking holes to allow steam to escape.
Brush the patties with an egg wash and place them in a preheated oven at 350°F for around 25-30 minutes.
Remove the patties from the oven and let them cool slightly before serving.
