Mix 1 and 1/2 cup of all-purpose flour, 1/2 teaspoon of sugar, and 1 beef bouillon cube in a bowl until well combined.
Grate in 3 tablespoons of cold butter using a cheese grater and mix with fingers until crumbly.
Add 4 ounces of room-temperature water gradually and mix until a dough forms, resembling play-doh texture.
If too much water is added, adjust with more flour; if too much flour, add more water.
Form the dough into a ball, cover with saran wrap, and refrigerate for about 30 minutes.
For the filling, heat 1/2 teaspoon of peanut oil in a skillet and cook chopped onion until translucent.
Add minced garlic and cook for about 2 minutes until fragrant.
Add chopped green onions and 1 scotch bonnet pepper, cooking for about 30 seconds.
Add thyme and then ground beef, cooking until no longer pink, adding it gradually to avoid clumping.
Add spices: paprika, curry powder, ground pepper, and salt, mixing well.
Add 4 tablespoons of water and 2 tablespoons of ketchup to create a thicker sauce, letting it simmer until thickened.
Remove dough from the fridge and roll it out on a floured surface to make four patties of uniform size.
Cut out round shapes from the rolled dough.
Place about 2 tablespoons of the beef filling on one half of each round.
Seal the patties using fingers and crimp the edges with a fork for decoration and to ensure they stay closed during cooking.
Prepare an egg wash using 1 egg (removing the egg white) and mixing it with 2 tablespoons of water.
Brush the egg wash onto the patties lightly.
Bake the patties in a preheated oven at 350°F for 20 minutes.
Remove from the oven and show the finished patties, highlighting their appearance and texture.
