Start by sautéing 2 pounds of 80/20 beef in a frying pan, breaking it up to release fat.
Blend aromatics (thyme, red onion, garlic, green onion, habanero, carrots) in a food processor until uniform but not a paste.
Drain excess oil from the beef and place it in the food processor to achieve a more uniform size.
Add 1/2 teaspoon of curry powder to the beef, followed by the blended aromatics, and sauté together.
Incorporate 1/2 teaspoon of MSG (optional), 1/2 teaspoon of allspice, and fresh ground pepper into the mixture.
Add 1 tablespoon to 1.5 tablespoons of oyster sauce and 2 tablespoons of dark soy sauce to the beef mixture.
Taste the mixture and adjust seasoning if necessary, then add 1/4 cup of water and turn the heat to low.
Mix in 1/2 cup of panko bread crumbs to the beef mixture and set aside.
For the dough, combine 4 cups of all-purpose flour, 1 teaspoon of curry powder, 2 teaspoons of turmeric powder, 2 teaspoons of baking powder, 3/4 teaspoon of chicken bouillon powder, 1 teaspoon of brown sugar, and 1/2 teaspoon of garlic powder.
Gradually add 1 cup of cold water with ice cubes and 1 teaspoon of white vinegar to the flour mixture to form a dough, avoiding heat from hands.
Combine the dough with 3/4 cup of grated cold butter, mixing gently to keep it cold.
Roll out the dough and cut into circles, placing a good amount of meat filling in each.
Fold the dough over the filling and seal with a fork for a classic closure.
Bake the patties in the oven until golden brown and hot.
