Traditionally enjoyed as a street food snack, these flaky pastries are filled with spiced beef and are a staple at parties and gatherings. Their popularity has spread beyond Jamaica, with variations found in Caribbean communities worldwide, making them a beloved comfort food.

Mix 6 cups of flour, 1 stick of butter, 1 teaspoon of salt, and 1 teaspoon of curry powder until it looks like coarse cornmeal.
Add enough ice cold water to make a dough, then wrap it in saran wrap and put it in the fridge to rest for approximately 20 minutes.
Prepare the filling by chopping 1 onion, 1 jalapeno pepper, green onion, and thyme as small as possible without blending them.
Add spices to the filling: a bit of black pepper, some paprika, and adjust the spice level as needed.
Chop garlic and additional pepper, adding about half to the filling to taste.
Add 1 teaspoon of soy sauce and 1 teaspoon of browning for color, then adjust flavor and let it cook for another 20 minutes with 1 cup of water.
Roll out the dough on a floured countertop to less than a quarter inch thick.
Cut the rolled dough into circles and remove excess dough.
Place filling on each circle, brush edges with milk and butter to seal, and use a fork to press and seal them completely.
Place the patties on a tray and glaze them with milk and butter before baking.
Preheat the oven to 350°F and bake the patties for 15 minutes.
