This dish reflects the Nicaraguan love for fresh, local produce and has gained popularity beyond its borders, with variations appearing in neighboring countries.

Fresh onions add crunch and flavor without the pickling process.
Cut the onions into small cubes until you have about 2 cups.
Place the onions in a pot with water and enough vinegar to cover them completely.
Bring the pot to low heat and let it boil for about 30 minutes until the onions are transparent.
In another pot, bring water to a boil and add 2 tablespoons of cream, mixing well.
Add the mozzarella ball to the boiling water and wait for 3 minutes before removing it.
If not using Babybel, boil the mozzarella for 7 minutes instead.
Place the mozzarella on a plate and stretch it out.
Add the optional Babybel cheese to the mozzarella and put it back in hot water for another 3 minutes.
Cut the mozzarella into two equal balls and return them to hot water for 2 more minutes.
Flatten one ball like a tortilla and stretch it with your fingers.
Repeat with the second ball.
On a plate, place the tortilla, then add the stretched cheese, onions to taste, cream, and salt.
