Add plum sugar to the curry paste mixture and stir until combined.
Check the tenderness of the beef and add the prepared curry paste to the pot.
Taste the mixture and adjust seasoning with tamarind sauce, fish sauce, and salt as needed.
Optionally add potatoes for extra value, explaining their purpose in the dish.
Turn off the heat once the desired taste is achieved and serve with rice.
