Mince ½ onion finely and sauté in a large pan with 1 Tbsp neutral oil until tender and almost translucent. Transfer to a bowl to cool.

In the bowl, combine the cooled onions with ¾ lb ground beef and pork, ½ tsp kosher salt, black pepper, and ½ tsp nutmeg.

Add ⅓ cup panko, 2 Tbsp milk, and 1 large egg to the mixture. Mix together with a spatula and then knead by hand until sticky and pale.

Divide the mixture into 4 portions (4 oz each) and shape into oval patties. Refrigerate for at least 30 minutes.

In the same pan, heat 1 Tbsp neutral oil over medium heat. Cook the patties for about 3 minutes on each side until browned.

Add 3 Tbsp red wine, cover, and cook for 5-7 minutes until fully cooked through.

To make the sauce, add 1 Tbsp butter, 3 Tbsp ketchup, 3 Tbsp tonkatsu sauce, 3 Tbsp red wine, and 3 Tbsp water to the pan. Simmer until thickened.

Serve the hamburger steaks with the sauce drizzled on top.
