Wash and peel the potatoes.

Slice the potatoes thinly using a mandoline or a sharp knife.

Soak the potato slices in cold water for at least 30 minutes to remove excess starch.

Drain the potato slices and pat them dry with a clean towel.

Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).

Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot.

Fry the potato slices for about 3-5 minutes or until they are golden brown and crispy.

Remove the chips from the oil and place them on paper towels to drain excess oil.
