Scrub the potatoes and leave the skins on.

Use a potato slicer or a sharp knife to slice the potatoes uniformly.

Heat 4 to 6 cups of peanut oil in a heavy pot to 380 degrees Fahrenheit.

Once the oil is at the right temperature, add the potato slices in small batches.

Stir the potato slices with a wooden spoon to prevent them from sticking together.

Cook the potato slices for a few minutes until they change color and feel harder.

Remove the cooked potato chips using a strainer and place them on paper towels to drain excess oil.

While the chips are still warm, sprinkle them with sea salt.
