Rinse and drain the potatoes in water three times to pull out starch.

After rinsing, place the potatoes in a bowl with ice water and add a couple tablespoons of salt.

Let the potatoes sit in the salted ice water for about 30 minutes to draw out more starch.

Rinse the potatoes again and let them sit in the water.

Dry the potatoes using a kitchen towel to remove excess water before frying.

Heat the oil to 365°F.

Add the potato slices to the oil a little bit at a time, avoiding overcrowding the pot.
