Chop up 1 yellow onion by cutting off the stem side, halving it, peeling off the skin, and making horizontal and vertical slices to create a checkerboard pattern.

Add the chopped chipotle pepper, 1 tablespoon of adobo sauce, and 1 tablespoon of tomato paste; mix well.

Add 1 pound of grass-fed ground beef, breaking it up with a spoon until it crumbles and the raw pink edge is gone.

Pour in 2 cups of low sodium chicken broth and stir everything together; increase heat to bring to a boil, then reduce heat to simmer for about 10 minutes.

Add 1 can of fire roasted tomatoes, 1 can of kidney beans, and 1 can of pinto beans; stir and let it come back to a simmer for about 10-15 minutes until the chili thickens.

Serve topped with plain Greek yogurt, sour cream, black pepper, and shredded cheddar cheese.
