Juice of 1/2 lime
1 large onion, finely chopped
1 chicken bouillon cube
1/2 cup water
1 cup red kidney beans, drained and rinsed
1 cup white cannellini beans, drained and rinsed
1 1/2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon smoked paprika
2 tablespoons corn oil
1/8 teaspoon sugar
salt
pepper
shredded cheddar cheese
shredded mozzarella cheese
sliced scallions
chopped cilantro

Sauté the onions in 2 tablespoons of corn oil in a large heavy-bottomed pan over medium heat.

Add the bell peppers and cook until the vegetables are tender and seasonings are aromatic.
