Slice 4 pieces of bacon and add to a large pot.

Heat the pot on medium heat and cook the bacon until crispy.

Dice 1 green bell pepper and 1 yellow onion, and mince 3 garlic cloves.

Add the diced bell pepper and onion to the pot with the bacon; cook for about 4 to 5 minutes until softened.

Add the minced garlic and stir for another 30 seconds.

Add 1 1/2 pounds of ground beef to the pot; cook until browned, about 5 to 7 minutes.

Stir in 2 tablespoons of tomato paste, 2 tablespoons of chili powder, 1 tablespoon of cumin, 2 teaspoons of paprika, 1 teaspoon of dried oregano, and 1 teaspoon of salt; toast the spices for about 1 minute.

Add 28 ounces of fire roasted tomatoes, drained and rinsed 15-ounce cans of red kidney beans and black beans, 2 cups of beef broth, and 1 bay leaf to the pot; stir well.

Increase heat to high until the chili comes to a boil, then reduce heat to medium low and let it simmer for 30 minutes.
