3 boiled potatoes (mashed)
½ tsp salt
1 tbsp coconut (grated)
1 tbsp coriander (finely chopped)
2 tbsp sev
2 tbsp pomegranate
2 tbsp spiced peanut

5 tsp green chutney
5 tsp tamarind chutney
5 tsp onion (finely chopped)

In a pan, take coriander seeds, cumin, fennel, pepper, cinnamon, black cardamom, cloves, star anise, bay leaf, sesame seeds, dry coconut, and dried red chillies. Dry roast on low flame until aromatic.

Cool completely and transfer to a small mixi jar. Add turmeric, aamchur, sugar, and salt. Blend to a fine powder to make dabeli masala.

In a large kadai, heat oil. Take prepared dabeli masala into a small cup, add tamarind chutney and water. Mix well and pour into hot oil. Cook for 2 minutes until aromatic.

Add boiled and mashed potatoes and salt. Mix well and mash to combine everything. Transfer to a plate and top with coconut, coriander, sev, pomegranate, and spiced peanuts.

Slit the pav in the center and spread green chutney on one side and tamarind chutney on the other. Stuff with prepared aloo dabeli mixture and onion.

Toast the pav in butter until both sides are golden brown. Roll the dabeli into sev and serve immediately.
