3 lb whole chicken
1 teaspoon sea salt
1 teaspoon black pepper
1 tablespoon all-purpose seasoning
1 teaspoon mixed herbs
1 teaspoon turmeric powder
2 tablespoons curry powder
1 tablespoon better pack curry
2 tablespoons homemade green seasoning
2 tablespoons vegetable oil
1 tablespoon fresh thyme
1 scotch bonnet pepper, chopped
2 tablespoons parsley, chopped
1 cup water

Clean and chop a whole chicken.

Season the chicken with sea salt, black pepper, all-purpose seasoning, mixed herbs, turmeric powder, curry powder, and better pack curry.

Add homemade green seasoning to the chicken and mix well.

Let the chicken marinate for at least 30 minutes to overnight.

Heat a little oil in a clean pan for 2-3 minutes.

Add the seasoned chicken to the pan and mix in the oil.

Cover the pan without adding any liquid and cook for about 5 minutes.

Check on the chicken after 4-5 minutes to see if it has released juices.

Add hot water from the kettle to the pan with the chicken.

Add fresh thyme and place the scotch bonnet pepper in the center.

Cover and let cook on low to medium heat for 40-45 minutes.

Remove the scotch bonnet pepper and thyme after cooking.

Garnish with fresh parsley before serving.
