250g Basmati Rice
30g butter
3-4 pods Black Cardamom
1 Cinnamon stick
3-4 Green Chillies
3 Bay leaves
1 heaped tablespoonful Cumin seeds
120 ml water
20g chopped Parsley
Salt to taste

Rinse the Basmati rice under cold water until the water runs clear.

In a pot, melt the butter over medium heat until it begins to foam.

Add the Black Cardamom, Cinnamon stick, Green Chillies, and Bay leaves to the pot, and sauté for a minute until fragrant.

Stir in the Cumin seeds and sauté for another minute.

Add the rinsed rice to the pot and stir to coat the rice with the butter and spices.

Pour in the water and add salt to taste, then bring to a boil.

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and water is absorbed.

Remove from heat and let it sit covered for another 5 minutes.

Fluff the rice with a fork and garnish with chopped Parsley before serving.
