Palak Green Moong Dal with Jeera Rice

Soak 1/4 cup of whole green moong dal overnight.

Heat 2 tablespoons of oil in a pressure cooker.

Add mustard seeds and cumin seeds, along with 2-3 green chilies and a small piece of grated ginger.

Add 1 chopped onion and sauté for about a minute.

Wash and chop a large bundle of spinach, including tender stems if desired.

Add the soaked whole green moong dal to the pot.

Mix in turmeric powder, Kashmiri chili powder, coriander powder, and salt to taste.

Add the chopped spinach leaves and stems to the pot.

Pour in 1 cup of water, as the spinach will release some water during cooking.

Pressure cook for one whistle and then switch off the heat.

For jeera rice, heat 1 tablespoon of ghee in a separate pot.

Add 1 1/2 teaspoons of cumin seeds and 2-3 slit green chilies to the ghee.

Add pre-cooked plain rice to the pot and reduce the flame to prevent sticking.

Mix everything well and add a little salt for taste.

Switch off the heat once mixed well and aromatic.

Once the pressure in the cooker is released, open it and mash the dal with the back of a ladle or a whisk.

If the dal is too thick, add hot water to reach the desired consistency.
