Jamaican Oxtail and Butter Beans

Jamaican oxtail stew has its roots in the Caribbean, where oxtail was once considered a humble cut of meat. Traditionally, it is a celebratory dish, often served at family gatherings and special occasions. The combination of tender oxtail, hearty butter beans, and aromatic spices creates a rich and comforting stew that reflects the vibrant flavors of Jamaican cuisine. Today, oxtail stew is enjoyed worldwide, with variations that highlight local ingredients and preferences.

Beef chuck is more affordable and can be used for stews.
Season the oxtail with the secret seasoning and let it marinate overnight or for a few hours.
Add 1/4 cup of soy sauce to the oxtail and mix well.
Prepare the seasoning paste with 2 bunches of fresh scallions, scotch bonnet pepper, and fresh thyme.
Heat olive oil in a pan over medium-high heat and add the seasoned oxtail, allowing it to sauté in its own juices until browned.
In a bowl, mix 1 teaspoon of salt and 2 teaspoons of sugar (brown or white) into flour to make dumplings.
Knead the mixture until it is not sticky and pliable, then roll into strips for dumplings.
Once the oxtail is about 90% done, add the seasoning paste and 1 teaspoon of whole allspice berries to the pot.
Add 1/2 cup of ketchup to the oxtail mixture for color and flavor.
After the oxtail has made its own juice, add 6 cups of water and 1/2 cup of evaporated milk to the pot.
Add the dumplings to the pot and swirl gently to avoid breaking them or the oxtail.
Add butter beans to the pot and swirl again to mix everything evenly.
