Place the minced meat in a medium bowl and add 2 tablespoons of olive oil, salt, and pepper.
Using your hands, blend the meat mixture together well.
Take approximately 200 g of the seasoned meat and form it into a ball, then place it on a serving plate.
Press lightly on the meatball to flatten it.
Repeat the process with another 200 g of meat, placing it on a separate plate and flattening it.
Make a small indent in the center of each meatball using a tablespoon.
Break the eggs one at a time and place the egg yolk in the indent you've made in the meat.
Add mayonnaise, capers, and chopped onions to each plate.
Spread chopped parsley onto the dish before serving.
