Prepare a large bowl or plate for mixing the ingredients.
Finely chop half a shallot into a very small dice and place it in the bowl.
Thinly slice chives and add about a tablespoon to the bowl next to the shallots.
Chop cornichons finely and add them to the bowl.
Pick leaves from Italian parsley, roll them up, and slice them finely before adding to the bowl.
Chop two anchovies finely and add them to the mixture in the bowl.
Cut the raw beef (filet) into small cubes and add to the bowl.
Add a generous amount of French mustard to the center of the bowl with the beef.
Place a whole egg yolk in the middle of the mustard and beef mixture.
Set the mixture aside while preparing the brioche dinner rolls.
Preheat the oven to 375 degrees Fahrenheit and prepare a baking vessel with hot water to create steam.
Place brioche dinner rolls in the baking vessel and bake for about 3-4 minutes.
In a small pot over low heat, melt butter and add chopped garlic, cooking for about five minutes.
Add herbs to the garlic butter once melted and set aside.
Return to the beef mixture, add a touch of salt, and whisk the egg yolk with the mustard to emulsify.
Drizzle in avocado oil while mixing to create a thick consistency.
Add Worcestershire sauce to the mixture and combine thoroughly.
Season with salt and black pepper to taste, adjusting as necessary.
Transfer the mixture to a serving plate for presentation if desired.
Brush the baked brioche rolls with garlic butter and sprinkle with Malden salt before serving.
Load the beef tartare mixture into the brioche roll and serve immediately.
