Add 2.5 teaspoons of yeast and a pinch of sugar to a bowl with 1/4 cup of warm water (about 110°F) and let sit for 5 minutes until bubbly.
In a mixing bowl, combine 1/2 cup of warm milk, 3 tablespoons of white sugar, 3/4 teaspoons of salt, 1/2 teaspoon of vanilla, and 1 large egg (noting it has a double yolk).
Add 3 tablespoons of vegetable oil to the mixture and stir.
Gradually add 2.5 cups of all-purpose flour to the mixture and mix for about 3-4 minutes until combined.
Transfer the dough to an oiled bowl, cover with plastic wrap, and let rise for about 30 minutes.
Prepare the coating by mixing 1/2 cup of sugar with 2 tablespoons of cinnamon.
After the dough has risen (about 45 minutes), punch it down and deflate it.
On a floured surface, cut pieces of dough and shape them into beaver tail forms by hand (aim for 10-12 pieces).
Spray the bottom of a flat pan with olive oil and place the shaped dough on it, spraying the tops with olive oil as well.
Set the air fryer to a temperature setting of 2.5 (between 2 and 3) and cook for about 10 minutes until golden brown, brushing the tops with an egg wash made from a scrambled egg and a tablespoon of water before cooking.
Let the beaver tails cool in the pan before plating.
Prepare a maple glaze by mixing powdered sugar, maple sugar, and a little heavy cream, then drizzle it over the cooled beaver tails.
