In a saucepan, combine water and sugar. Heat over medium heat until the sugar dissolves completely. Remove from heat and set aside.

In a large skillet, melt the butter over medium heat.

Add the semolina to the melted butter, stirring continuously to toast the semolina until it turns golden brown, about 10-15 minutes.

If using, add the pine nuts to the skillet and continue to stir for another 2-3 minutes until they are lightly toasted.

Slowly pour the sugar syrup into the toasted semolina mixture, stirring constantly to prevent lumps from forming.

Add vanilla extract and cinnamon (if using) to the mixture and stir well.

Reduce the heat to low, cover the skillet, and let it cook for about 10 minutes, allowing the flavors to meld and the mixture to thicken.

Remove from heat and let it sit covered for another 5 minutes.

Fluff the helva with a fork before serving, and optionally garnish with additional pine nuts or cinnamon.
