İrmik Helvası
Cultural Context
İrmik Helvası is a traditional Turkish dessert made from semolina, often served during special occasions and gatherings.
Turn on the stovetop.
Add 80 grams of butter to the pan and wait for it to melt slightly.
Add half a teacup of olive oil and mix well.
Add 1.5 cups of semolina and sauté for 5 minutes, stirring occasionally.
Add 0.5 cup of flour and continue roasting, stirring constantly.
Set the stove on low heat and roast the mixture for about 25-30 minutes, stirring constantly to prevent burning.
After 20 minutes, the mixture should release its oil and look oily, which is normal.
If you want a lighter color, you can add sugar and water after 30 minutes of roasting.
Add 2 cups of granulated sugar and 3.5 cups of water to the mixture without melting the sugar first.
Stir the mixture thoroughly and let it sit for a minute or two.
Slowly stir in the water over low heat until the sugar melts and the halva thickens nicely.
Turn the heat down to half and add half a glass of cold water to bring it to a boil.
Increase the heat and stir constantly as it begins to thicken and boil.
Once it starts to boil, turn the heat down to low again and let it absorb the water without stirring too much.
After stirring a few more times, turn off the heat and let it rest for a minute or two.
Plate the halva and shape it with a spoon or teaspoon.
Garnish with pistachios or walnuts, or serve with ice cream.
