Pour 1 tablespoon of oil and 2 tablespoons of ghee into a pressure cooker.

Once the oil is hot, add whole spices: cinnamon, cloves, cardamom, star anise, and bay leaf; fry for a few seconds.

Add 2 thinly sliced onions and 4 slit green chilies; sauté until the onions turn golden brown.

Add 1 teaspoon of ginger garlic paste and sauté for a moment.

Add 2 chopped tomatoes and mix; cook until the tomatoes turn mushy.

Add 1/4 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1 teaspoon cumin powder, 1 teaspoon coriander powder, and 1 teaspoon salt; mix well while keeping the flame low.

Add a handful of whole pudina leaves and a handful of whole coriander leaves; mix well without chopping the leaves.

Add 1 cup of jira sambar rice (washed and soaked for about half an hour) to the cooker.

Pour in 2 cups of water and mix; check for seasoning and add more salt if needed.

Add 1 tablespoon of ghee to the rice and mix again.

Close the cooker, place the weight, and allow it to cook for one whistle.

Let it cool and release the pressure after 10 minutes; then open the cooker and mix gently.
