Cultural Context

Komatsuna kimchi, a variant of traditional kimchi, showcases the versatility of this leafy green, which is often used in Japanese cuisine but has found a place in Korean pickling traditions. This dish reflects the Korean emphasis on fermentation, a method that not only preserves vegetables but also enhances their flavors and nutritional value. In modern times, variations of kimchi can be found globally, appealing to diverse palates while retaining their cultural roots.

1

Wash the komatsuna thoroughly.

2

Cut off the stems of the komatsuna and weigh it; it should be 534 grams.

3

Calculate 8% of the weight for salt, which is 42 grams.

4

Sprinkle salt over the komatsuna, ensuring to cover both the leaves and stems.

5

Wrap the salted komatsuna and press it down, leaving it to sit for 2 hours, turning it halfway through.

6

After 1 hour, check the komatsuna and see the water released; turn the top and bottom and wait another hour.

7

Prepare the kimchi paste by mixing grated apple, grated ginger, salted shrimp, salted squid, sugar, and red chili pepper powder.

8

Once the komatsuna is ready, rinse off the excess salt.

9

Mix the komatsuna with the kimchi paste until well coated.

10

Transfer the kimchi to a container and let it ferment at room temperature for 2-3 days before refrigerating.
