Prepare 2 pounds of chicken breast by slicing it thinly and pounding it with a rolling pin to tenderize.
Put on gloves and combine the following spices in a bowl: 1 teaspoon garlic powder, 1 teaspoon Kashmiri chili powder, 0.5 teaspoon black pepper, 0.5 teaspoon cumin powder, 0.5 teaspoon oregano, and 1 teaspoon salt.
Add 2 tablespoons of yogurt to the spice mixture and mix well to marinate the chicken.
Let the chicken marinate for around 15 minutes to 1 hour, depending on your available time.
In a blender, add 2 tablespoons of dried red chili soaked in 4 tablespoons of vinegar, 1 teaspoon garlic powder, and 0.5 teaspoon salt. Blend until slightly coarse.
To thicken and reduce the heat of the sauce, add 1 tablespoon of Kashmiri chili powder and mix well.
Prepare the sauce by mixing 6 tablespoons of mayonnaise, 2 tablespoons of cream, a pinch of salt, 0.5 teaspoon garlic powder, and 2 teaspoons of lemon juice in a bowl.
For the salad, chop and combine the following vegetables in a bowl: 0.5 onion, 1 small cucumber, 3 small radishes, 2 tablespoons of chopped coriander, 1 handful of cabbage, and 1 small carrot.
Add 4 tablespoons of pickled cucumber juice and 0.5 teaspoon salt to the vegetable mixture and mix well.
After 45 minutes of marinating, heat a griddle pan and lightly oil it to toast the pita bread.
Toast the pita bread on the griddle pan and keep it warm in a towel.
Add a little oil to the griddle pan and place the marinated chicken slices, cooking for 3 minutes on each side over high heat.
Check the chicken for doneness; it should be tender and not overcooked to avoid toughness.
Remove the chicken from the pan and let it rest for 5-7 minutes to retain juices before slicing it diagonally.
Assemble the shawarma by taking a pita, adding the red sauce, white sauce, vegetables, and sliced chicken, then folding it up.
Repeat the assembly process for the remaining ingredients.
