Get a big mixing bowl and soak the oxtails in a saltwater solution until they thaw out, then rinse them off.

Chop the small onion and add it to the food processor.

Use half of each bell pepper (red and green) and chop them up, removing the seeds.

Cut off the ends of the scallions and use about 6 to 8 sticks, adding them to the food processor.

Add the tomato and minced garlic to the food processor with the other vegetables and blend them together.

Add 1 tablespoon of Worcestershire sauce, Browning and seasoning sauce, and ketchup to the blended vegetable mixture.

Massage the blended vegetable mixture onto the oxtails and let them marinate in the refrigerator for 5-8 hours.

Scrape off the seasoning from the oxtails and massage in some all-purpose flour.

Heat a non-stick pot over medium heat and add olive oil.

Brown the oxtails in the pot for about 10 minutes, stirring frequently to prevent burning.

Add the remaining seasoning mixture and stir it in with the oxtails.

Add the whole scotch bonnet pepper to the pot.

Pour water into the bowl with the remaining seasoning to get all the flavor and add it to the pot.

Cover the pot with a lid, leaving a crack for steam to escape, and let it cook for 3.5 to 4 hours, stirring every 25-30 minutes.

Check the oxtails every 25-30 minutes to ensure they don't stick to the bottom of the pot.

After about 3 hours, the juice should start thickening into a gravy; if not, let it cook longer.

Once the oxtails are tender and the juice has thickened, add the butter beans.
