1 tsp chili powder
1 tsp paprika
1 tsp black pepper
2 tbsp pimento seasoning
2 tbsp Jamaican brown onion seasoning
4 tbsp vegetable oil
brown sugar
ketchup
broccolini
butter
salt
pepper

Wash the ingredients including broccolini, tomato, bell peppers, skellion, yellow onion, ginger, and scotch bonnet pepper.

Blend skellion, scotch bonnet pepper, garlic, and onion with water to create a marinade.

Chop the carrots and bell peppers, set aside for later.

Clean the chicken, removing skin and fat as desired, then rinse with vinegar.

Combine 1 tbsp chicken seasoning, 1 tbsp all purpose seasoning, 1 tsp cayenne pepper, 1 tsp chili powder, 1 tsp paprika, and 1 tsp black pepper in a bowl.

Add 2 tbsp pimento seasoning and 2 tbsp Jamaican brown onion seasoning to the spice mixture.

Mix the seasoning and apply it to the cleaned chicken, marinate in the fridge for 2 hours.

Heat 4 tbsp vegetable oil in a pot on high heat, sear the marinated chicken until browned.

Add 2-3 cups of water to the pot with the chicken and cover, cooking for 30 minutes.

After 30 minutes, add the chopped vegetables (carrot, onion, garlic, ginger, tomato, bell peppers) and stir.

Add brown sugar and a bit of ketchup to balance the flavor, cook for an additional 10 minutes.

Steam the broccolini with butter, salt, and pepper.
