1 tablespoon cajun spice
4 cloves garlic
2 tablespoons Irie brand spice and herb seasoning
1 teaspoon onion powder
2 tablespoons seasoning sauce
1 teaspoon seasoning salt
1 teaspoon black pepper
2 teaspoons thyme
1 tablespoon fresh ginger, grated
1 large onion, chopped
4 scallions, chopped
2 tomatoes, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
2 tablespoons corn oil

Wash the chicken with vinegar and lemon to ensure it's clean.

In a bowl, add cajun spice, garlic, Irie brand spice and herb seasoning, onion powder, seasoning sauce, seasoning salt, and black pepper to the chicken.

Add thyme, chopped garlic, fresh ginger, onions, scallions, tomatoes, and bell peppers to the chicken and mix well.

Heat corn oil in a pot until hot.

Add the chicken to the pot, scraping off excess vegetables to prevent burning, and brown the chicken on both sides.
