Preheat the oven to 400°F.
Slice the shiitake and button mushrooms in half; keep the crimini mushrooms whole if they are the right size.
Place all the mushrooms in a large bowl.
Add about 2 tablespoons of olive oil to the mushrooms.
Season with a good dose of salt and black pepper.
Add 12 whole cloves of garlic to the bowl.
Toss everything together with your hands until the mushrooms are evenly coated with oil.
If the mixture feels dry, add a little more olive oil until you feel a film over the mushrooms.
Sprinkle fresh herbs (rosemary, thyme) over the mushrooms before roasting.
Roast in the preheated oven for 25-30 minutes, until the mushrooms have shrunk and released their juices.
Check the garlic for tenderness with a fork; it should be soft.
Remove the mushrooms from the oven and sprinkle with chopped fresh herbs (rosemary, thyme, chives, parsley).
Serve the mushrooms warm, optionally with crusty bread for dipping into the juices.
