Remove the silver skin from the liver. Slice beef liver into 1/4 inch thick slices.

Season beef liver with meat seasoning, black pepper, and flour.

Heat vegetable oil in a large sauté pan over high heat.

Add seasoned beef liver to hot oil, sauté for 2 minutes, stirring constantly.

Add minced garlic, chopped onion, chopped tomatoes, thyme leaves, Scotch bonnet pepper, and soy sauce. Sauté for 2 minutes more and serve.
