Today, variations abound, with grilling and butter sauces enhancing their rich, sweet flavor, making them a favorite in summer barbecues and upscale restaurants alike.

Butterfly the lobster tails using kitchen shears by snipping through the shell and peeling it back to expose the meat.
In a bowl, add the melted butter, snipped chives, and grated lemon rind, and stir together.
Remove 2 tablespoons of the chive butter sauce and set aside for later.
Brush the lobster meat with the 2 tablespoons of chive butter sauce.
Preheat the grill to medium heat.
Place the lobster tails meat side down on the grill and cook for about 6 minutes.
Flip the lobster tails over and brush with more chive butter sauce.
Cook for an additional 6 to 8 minutes until the meat is opaque.
