Garlic Butter Lobster Tails

Cilantro adds freshness and is often cheaper.
Rinse the lobster tails and pat dry with a paper towel.
Lay the lobster tails down with the tender side up.
Using a heavy-duty chef knife, cut down the middle of the shell and crack it open.
Carefully pull out the meat and butterfly it out.
Drizzle chive oil over the lobster meat and tuck it back in to marinate for about 30 minutes in the refrigerator.
After marinating, season with kosher salt and fresh cracked pepper.
Preheat a cast iron grill pan on medium heat and a saute pan on medium as well.
In the saute pan, melt 2 tablespoons of butter and add 1 teaspoon of garlic shallot puree (or 2 cloves of garlic).
Once the butter is melted and the garlic is fragrant, add 1/4 cup of water and 2 tablespoons of parsley.
Sear the lobster tails in the cast iron grill pan for about a minute, then turn them over.
Tilt the pan and spoon the hot buttery garlic sauce over the lobster until cooked through, adding more water if necessary.
Garnish with chives and drizzle more butter sauce on top before serving.
