1

Peel and cut the sweet potatoes into small pieces.

2

Steam the sweet potatoes until soft and tender.

3

Prepare the syrup by combining sugar, water, salt, and pandan leaves in a saucepan. Bring to a boil, then simmer until sugar dissolves. Remove pandan leaves and divide the syrup into three portions.

4

In three separate bowls, blend each type of sweet potato with its respective ingredients and one portion of the sugar syrup until smooth.

5

Divide each mixture into 3 equal portions for layering.

6

Lightly grease an 8x8 inch pan and place it in the steamer to preheat.

7

Pour one portion of the white mixture into the prepared pan and steam for 4 minutes.

8

Pour one portion of the orange mixture on top of the white layer and steam for 5 minutes.

9

Pour one portion of the purple mixture on top of the orange layer and steam for 5 minutes.

10

Continue alternating the layers (white, orange, purple) until all 9 layers are done, steaming for 5 minutes after the final layer.

11

Turn off the heat and let the cake sit uncovered in the steamer for 2 minutes before transferring to a cooling rack.

12

Let the cake cool completely for 2–3 hours before cutting.
