270 grams all-purpose flour (2 1/4 cups)

Warm 1/2 cup of water to about 105-110 degrees in the microwave.

In a mixing bowl, combine 270 grams of all-purpose flour and 1 teaspoon of salt.

Add the yeast mixture, 1 tablespoon of olive oil, and 1/3 cup of plain yogurt to the flour mixture.

Mix on low speed until combined, then increase to medium speed and knead for 8 to 10 minutes until the dough is smooth and elastic.

While the dough is rising, make ghee by slowly melting butter and skimming off the milk solids until clear.

Divide the risen dough into eight equal pieces and shape them into balls.

Heat a 12-inch cast iron skillet over medium heat.

Place the rolled dough onto the skillet and cook for 1 to 2 minutes until bubbles form.

Instead of flipping the naan, flip the skillet over to cook the other side, allowing gravity to create larger bubbles.
