Frozen vegetables are often cheaper and just as nutritious.
Take 2 cups of wheat flour in a bowl.
Add 1 tablespoon of salt to the flour.
Pour in 0.5 cups of water and mix well.
Add more water gradually until the dough is soft, similar to roti dough.
Cover the dough and let it rest for 15 minutes.
In a pan, heat 2 tablespoons of oil.
Add mustard seeds and wait for them to pop.
Add curry leaves and grated ginger, sautéing for a few seconds on low flame.
Add 1 green chili (sliced) and 1 chopped onion, sauté until the onion turns slightly red.
Turn off the flame after the onion is sautéed.
In a bowl, mash 5 medium-sized boiled potatoes.
Add the sautéed mixture to the mashed potatoes.
Mix in 1 tablespoon of cumin powder, 0.5 teaspoon of amchur powder, 0.5 teaspoon of garam masala, 0.5 teaspoon of red chili powder, and salt to taste.
Add fresh coriander leaves and mix everything well.
Divide the dough into equal portions and roll each portion into a ball.
Sprinkle some dry flour and roll out each ball into a flat disc, similar to making roti.
Cut the rolled dough into circles using a bowl or cutter.
Roll out the circles slightly thicker than usual.
Heat a pan and place the rolled dough on it to cook on medium-low flame.
Cook until the bottom is slightly cooked, then flip it over.
Remove from the pan and repeat with the remaining dough.
Spread green chutney on one side of the cooked dough.
Add cheese on one side if desired, and spread the potato filling on top.
Fold the dough over to create a taco shape.
In the same pan, add a little butter and place the folded taco to cook.
Cook on medium-high flame for about 2 minutes on each side until golden brown spots appear.
Serve hot and enjoy.
