In a saucepan, add 2 cups of water and bring it to a boil.

Add a bowl of soy protein to the boiling water and boil for 3-4 minutes.

After boiling, strain the soy protein to separate it from the water.

Squeeze out the excess water from the soy protein using your hands.

In a bowl, add the drained soy protein and mix in 3 tablespoons of oil, salt to taste, turmeric, Kashmiri red chili, coriander powder, and garam masala.

Mix everything well and let it rest for 10 minutes.

In a pan, heat 1 tablespoon of refined oil over medium heat for 2-3 minutes.

Add 1/2 chopped onion to the pan and sauté it for a minute.

Add chopped green chili and tomato to the pan and sauté for 1-2 minutes.

Add kasuri methi for flavor and mix well.

Add the marinated soy protein to the pan, reduce the heat to low, and mix everything together.

Switch back to medium heat and cook for 1-2 minutes until the mixture releases water.

Cook on medium heat for 2-3 minutes until the water evaporates and the mixture has a gravy-like texture.

Prepare the roti by rolling out the dough and cooking it on low flame until it becomes crunchy.

Use red flour instead of maida for the roti.

Once the roti is ready, spread 1 tablespoon of mayonnaise on half of it.

On the other half, spread tomato ketchup.

Add the prepared stuffing on the mayonnaise side of the roti.
