Select fresh okra and wash it thoroughly to prevent sliminess.
Break the stem of the okra and make a slit along one side without cutting through.
Cut the tops and bottoms of the okra and prepare them for stuffing.
Chop fresh coriander finely and set aside.
Prepare the stuffing by mixing garlic chutney, coriander powder, red chili powder, turmeric powder, asafoetida, and salt in a bowl.
Add 2 to 3 tablespoons of peanut powder and sesame powder to the stuffing mixture.
Add lemon juice and sugar to balance the flavors, then mix everything well.
Stuff each okra with the prepared filling, pressing gently to seal.
Heat oil in a pan and add asafoetida once the oil is hot.
Add the stuffed okra to the pan and coat them lightly with oil, being careful not to break them.
Cover the pan and cook on low flame, stirring occasionally, until the okra is tender and cooked through.
If the okra appears slimy, ensure that the lemon juice has been added to help with that.
Once cooked, add any remaining stuffing on top and mix gently.
Add buttermilk if desired for a tangy flavor, adjusting salt to taste, and let it cook for a while until the gravy thickens.
Garnish with fresh coriander before serving.
