3-4 tbsp Raw peanuts
1/4 cup grated dry Coconut
2 tbsp Ginger & Garlic paste
1 tsp Sesame seeds
1/2 tsp turmeric
1 tsp Red chilli powder
Coriander powder
Salt to taste
250 gms Bhindi/Okra
2 tbsp Oil
1 tsp cumin & mustard seeds
curry leaves (optional)
Finely chopped Coriander leaves (optional)

Heat up a pan on medium heat.

Add sesame seeds and raw peanuts and fry until they get light reddish colour.

When peanuts just begin to turn reddish, add coconut and mix well.

Turn off the gas and transfer the mixture into the blender pot when it cools down.

Grind the mixture into a coarse powder. Do not grind into fine powder.

In a bowl, add red chilli powder, coriander powder, turmeric, and salt and to this add the ginger and garlic paste and mix well.

Now add the blended powder from the jar to the bowl and mix everything well together.

Wash the okra thoroughly under water and dry it completely.

Cut off the stalk and give a slit across without cutting it completely.

Fill the stuffing in each okra and keep it aside. If some stuffing is left, keep it aside.

Heat up oil in a pan.

When oil is hot, add cumin and mustard seeds and curry leaves if using, and fry well.

Add the stuffed okra and mix well.

Cover and cook for about 5 minutes, stirring occasionally.

After 5 minutes, remove the lid and mix well.

Cook okra uncovered on medium heat for about 15-20 minutes, stirring at intervals.

When okra is almost cooked, add the leftover stuffing and mix well.

Fry for another 5 minutes, then turn off the heat and add finely chopped coriander leaves.
