Fill a pot with water, add salt, and bring it to a boil.
Dice Yukon potatoes and add them to the boiling water to cook until softened.
In a skillet, heat olive oil over medium heat and add 4 oz of ground turkey and 1/2 cup of chopped white onion; cook until browned.
Add 1 tablespoon of Worcestershire sauce, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper to the turkey and onions.
Incorporate 2 tablespoons of tomato paste, 2-3 tablespoons of chopped fresh parsley, 1 tablespoon of fresh rosemary, and some dried thyme into the skillet.
Pour in turkey broth and bring the mixture to a boil; let it simmer until the sauce reduces slightly.
If the sauce is too watery, add a little flour; if you want more sauce, add more broth.
Once the potatoes are soft, strain them and add them to a mixer with heavy cream, sour cream, and chives; blend until smooth.
Season the mashed potatoes with salt and pepper to taste, about 1/4 teaspoon each, and mix well.
Spread the turkey mixture evenly in a shallow baking dish.
Top the turkey mixture with the mashed potatoes, spreading them evenly to the edges.
Bake in the oven at 350°F for 20 to 30 minutes until the top is golden brown.
Let the shepherd's pie cool slightly before serving.
