1

Slice the onions into fairly thick and chunky pieces and place them into a roasting pan.

2

Pull the rosemary leaves off the stem and roughly chop them; combine with salt and black pepper in a bowl and mix well.

3

In a frying pan, melt together butter and maple syrup until well combined.

4

Brush the melted butter and maple syrup mixture all over the pork roast.

5

Rub the rosemary, salt, and pepper mixture into the pork roast, ensuring it gets into every nook and cranny.

6

Place the pork roast on top of the sliced onions in the roasting pan and put it in the oven.

7

After about 20 minutes of roasting, pull out the pork roast and reduce the oven temperature.

8

Slice the apples into fairly thick chunks (no need to peel them) and add them to the roasting pan with the pork roast.

9

Return the pork roast to the oven for another hour and a half, aiming for an internal temperature of about 155°F (68°C).

10

Once done, remove the pork roast from the oven and loosely tent it with tinfoil; let it rest for 10-15 minutes before serving.
