Start with warm milk and add instant yeast.
Add castor sugar and mix with a spatula.
Add yogurt for softness.
Incorporate all purpose flour and salt, mixing with a spatula.
Knead the dough by hand on a counter for about 5 minutes until it stops sticking.
Flatten the dough and add butter, kneading until fully incorporated.
Perform the window pane test to check if the dough is ready.
Shape the dough into a ball and cover it with a bowl to rise for about 1 hour.
After an hour, knock down the dough and roll it out into a rectangle with dry flour.
Spread softened salted butter over the dough using a palate knife.
In a bowl, mix brown sugar and cinnamon powder with hands.
Sprinkle the cinnamon mixture over the buttered dough, pressing it down with a rolling pin.
Roll the dough tightly from one end to form a log.
Cut the log in half, then cut each half into 3 equal pieces for thicker rolls.
Place the rolls in an oval dish, ensuring the seam is on the side.
Press the rolls slightly from the top to make them even in height.
Optionally, add butter to the bottom of the pan to prevent sticking.
Proof the rolls for 30 minutes until they have fluffed up.
Bake the rolls at 180 °C for 12-18 minutes until golden brown.
Prepare the glaze by mixing icing sugar, 2 tbsp warm milk, 1 tbsp melted butter, and 1/8 tsp vanilla extract.
Let the cinnamon rolls cool for 10-15 minutes before glazing them.
Spoon the glaze over the rolls, allowing it to drip off the sides.
